Christmas Cakes

A traditional fruit cake is a rich dense yet moist cake loaded with dry fruits & nuts, flavoured with spices usually made during christmas. In India, the fruit cake is found everywhere during christmas season & it makes a perfect gift for christmas or to share with family & friends. A fruit cake can be consumed by itself or with a layer of marzipan or fondant & christmas decorations to enhance the look of the cakes making it a perfect gift during the festive season  
The dry fruits like sultanas, raisins, currants, dates, apricots, cherry, cranberries, figs & nuts like almonds, cashew nuts, pistachios, walnuts are traditionally soaked in rum or brandy for a month to a year. These are then mixed with rest of the cake batter along with homemade caramel & spices & baked at a very low temperate for longer than normal cakes
                                                       



Once baked the cakes are brushed with rum or brandy & cling wrapped & stored away in an air tight container for about 2 weeks to a month, brushing it with alcohol occasionally 
For those who do not like alcohol in their cakes the dry fruits & nuts are soaked in orange juice & baked 




The fruit cakes are traditionally glazed with orange glaze or any fruit glaze, covered with marzipan & lastly covered with fondant & decorated as desired

These cakes are so dense, moist & over loaded with dry fruits & nuts that they taste good with just a dusting of icing sugar


Across the globe recipes varied greatly in different countries throughout the ages, in some countries fruit cakes are available through out the year while in some countries the cakes are drenched in darkest possible rum while in some other countries these are available only during christmas. Irresistible, nostalgic, delicious, have it your way

Chocolate Yule log Cake

 A traditional French bûche de Noël made with a light chocolate sponge cake, baked in a large swiss roll tin, filled with lots of light chocolate whip cream, rolled to form a cylinder & then generously iced with chocolate buttercream frosting   


 Once iced the cake is dusted with icing sugar to resemble snow & give it a more realistic look & decorated with christmas decorations



    
The chocolate log cake is decorated with edible fondant holy leaf & snow man!!!
